SAR Field Trip Cookies

(Makes approximately 9 dozen)

Preheat oven to 350

margarine or butter, softened (I use 1C butter and 1 cup butter-flavored Crisco)
firmly packed brown sugar
granulated sugar
eggs
vanilla extract
flour
baking soda
cinnamon
salt
Quaker Oats
chopped dates or raisins
chocolate chips
coarsely chopped nuts (I prefer macadamia or hazelnuts)
coconut flakes

Beat butter and sugars together until creamy. Add eggs and vanilla extract; beat well. Add flour, baking soda, and cinnamon; mix well. Stir in oats, dates or raisins, chips, nuts, and coconut. Mix well. Chill dough in covered bowl for at least 1 hour.

Drop by heaping tablespoons onto ungreased cookie sheet. Bake 11-12 minutes or until golden brown. Cool 1 minute on cookie sheet then remove to cooling rack.
